Here is a recipe for a traditional Banoffee Pie from England:
Ingredients:
- 250g digestive biscuits
- 100g unsalted butter, melted
- 400g can of condensed milk
- 2 large bananas, sliced
- 300ml double cream
- 2 tbsp icing sugar
- cocoa powder, for dusting
Instructions:
Crush the digestive biscuits into crumbs using a food processor or a rolling pin. Mix the biscuit crumbs with the melted butter and press the mixture into the base and sides of a 23cm loose-bottomed tart tin. Chill in the refrigerator for 30 minutes.
Place the can of condensed milk in a saucepan and cover it with water. Bring the water to a boil, then reduce the heat and simmer the can for 3 hours, making sure it is completely covered with water at all times. After 3 hours, remove the can from the water and let it cool completely before opening it. This will turn the condensed milk into caramel.
Spread the cooled caramel over the biscuit base, and then add a layer of sliced bananas on top.
Whip the double cream and icing sugar together until thick and spreadable. Spread the whipped cream over the bananas.
Chill the Banoffee Pie in the refrigerator for at least 2 hours, or until the cream is set.
Dust the top of the pie with cocoa powder before serving.
