Bingsu (빙수) cake

Here's a recipe for making a Bingsu cake at home:

Ingredients: 

For the Cake:

2 cups graham cracker crumbs
1/2 cup melted unsalted butter
1/4 cup granulated sugar

For the Shaved Ice:

4 cups ice cubes
1/2 cup sweetened condensed milk
1/4 cup milk (any kind)
Assorted sweet toppings such as sliced fruit, sweetened red beans, chopped nuts, and syrup (e.g., strawberry syrup, mango syrup, etc.)

Instructions:

  1. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture is well combined and resembles wet sand.
  2. Press the graham cracker mixture into the bottom of a round cake pan or springform pan, creating the crust for the Bingsu cake. You can use the back of a spoon or a flat-bottomed glass to press the mixture firmly into the pan.
  3. Place the pan with the crust in the refrigerator to chill for about 15-20 minutes to set.
  4. Meanwhile, prepare the shaved ice. In a blender, combine the ice cubes, sweetened condensed milk, and milk. Blend on high speed until the ice is crushed and the mixture has a snow-like texture.
  5. Remove the pan with the chilled crust from the refrigerator. Pour the shaved ice mixture onto the crust, spreading it evenly to create a layer of shaved ice.
  6. Add the desired sweet toppings on top of the shaved ice layer, such as sliced fruit, sweetened red beans, chopped nuts, and syrup. You can arrange the toppings in any pattern or design you like.
  7. Place the pan back in the freezer and freeze for at least 4 hours, or until the Bingsu cake is firm and set.
  8. When ready to serve, remove the Bingsu cake from the freezer and let it sit at room temperature for a few minutes to slightly soften before cutting into slices.
  9. Serve the Bingsu cake slices with spoons and enjoy the refreshing and sweet flavors of this delightful Korean dessert!

Note: You can customize the toppings and syrup according to your preference. Popular fruit options for Bingsu include strawberries, mangoes, blueberries, and kiwis, but you can use any fruit you like. You can also use store-bought fruit syrups or make your own by pureeing fruits and adding sugar or honey to taste.
