Carrot Cake (당근 케이크)




Carrot cake Korean style, also known as "dang-geun cake" in Korean, is a popular dessert in Korea with some variations from the traditional carrot cake.

Here's a simple recipe for Korean-style carrot cake in English:

Ingredients:

For the cake:

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/4 tsp salt
1 cup grated carrots
1/2 cup chopped walnuts
1/4 cup mugwort powder (optional)
1/4 cup glutinous rice flour (optional)

For the frosting:

8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 tsp vanilla extract

Instructions:

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.


In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon powder, and salt.


Add the vegetable oil and eggs to the dry ingredients, and mix until well combined.


Stir in the grated carrots, chopped walnuts, mugwort powder (if using), and glutinous rice flour (if using) until evenly distributed.


Pour the batter into the prepared cake pan and smooth the top with a spatula.


Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.


Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.


For the frosting, beat the cream cheese and butter together in a mixing bowl until creamy and smooth.


Gradually add the powdered sugar, one cup at a time, and vanilla extract, and continue to beat until the frosting is smooth and fluffy.


Once the cake has cooled completely, spread the frosting over the top of the cake using a spatula or a cake decorating tool.


Optional: You can decorate the cake with additional chopped walnuts or grated carrots on top for garnish.

Note: Mugwort powder and glutinous rice flour are optional ingredients that can be found in Korean grocery stores. They add unique flavors and textures to the cake, but if you can't find them, you can still make a delicious carrot cake without them.
