Ingredients:
- 300g (2 cups) plain flour
- 2 tsp baking powder

- 200g (1 cup) caster sugar
- 200g (1 cup) light brown sugar

For the cream cheese frosting:
- 200g (1 cup) cream cheese, at room temperature
- 100g (1/2 cup) unsalted butter, at room temperature
- 400g (3 cups) icing sugar
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 180°C (350°F) and grease and line a 20cm (8-inch) round cake tin with parchment paper.
- In a large mixing bowl, sift together the flour, baking powder, cinnamon, nutmeg, baking soda, and salt.
- In another mixing bowl, beat together the eggs, caster sugar, light brown sugar, vegetable oil, and vanilla extract until smooth.
- Slowly add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the grated carrots, chopped walnuts, and raisins.
- Pour the batter into the prepared cake tin and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, beat the cream cheese and butter together until smooth.
