Cherry Bakewell cake

Here's a recipe for Cherry Bakewell cake that you can try at home:

Ingredients:

  1. 175g unsalted butter, softened
  2. 175g caster sugar
  3. 3 large eggs
  4. 50g ground almonds
  5. 150g self-raising flour
  6. 1 tsp baking powder
  7. 4 tbsp milk
  8. 4 tbsp cherry jam
  9. 100g icing sugar
  10. 1-2 tbsp water
  11. Glacé cherries, for decoration

Instructions:

Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a 20cm round cake tin.


In a large mixing bowl, cream together the butter and sugar until light and fluffy.


Beat in the eggs, one at a time, adding a tablespoon of ground almonds with each egg.


Sift in the flour and baking powder and fold into the mixture.


Stir in the remaining ground almonds and milk until the mixture is smooth.


Spoon half the mixture into the prepared cake tin and smooth the top with a spatula.


Spoon the cherry jam over the cake mixture and spread evenly.


Spoon the remaining cake mixture on top of the jam and smooth the top.


Bake in the preheated oven for 40-45 minutes, or until golden brown and a skewer inserted into the centre of the cake comes out clean.


Allow the cake to cool completely in the tin before removing and transferring to a serving plate.


In a small mixing bowl, mix the icing sugar with enough water to form a smooth, runny icing.


Drizzle the icing over the top of the cake and decorate with glacé cherries.


Slice and serve.
