Chocolate fudge cake is a delicious dessert that is enjoyed in England and around the world. Here's a recipe for a classic chocolate fudge cake:
Ingredients:
- 200g unsalted butter, softened
- 200g caster sugar
- 4 large eggs
- 200g self-raising flour
- 50g cocoa powder
- 1 tsp baking powder
- 4 tbsp milk
- 200g dark chocolate, melted
- 200ml double cream
- 50g icing sugar, sifted
Instructions:
- Preheat the oven to 180°C/160°C fan/gas mark 4. Grease and line two 20cm round cake tins with baking paper.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, adding a tablespoon of flour with each egg to prevent curdling.
- Sift in the remaining flour, cocoa powder, and baking powder, and then fold into the mixture until smooth.
- Stir in the milk until the mixture is a dropping consistency.
- Divide the mixture between the two prepared tins and smooth the tops with a spatula.
- Bake for 20-25 minutes or until the cakes are springy to the touch and a skewer inserted into the center comes out clean.
- Leave the cakes to cool in the tins for 5 minutes before turning them out onto a wire rack to cool completely.
- To make the fudge frosting, melt the dark chocolate in a heatproof bowl set over a pan of simmering water.
- In a separate bowl, whisk the double cream and sifted icing sugar together until the mixture forms soft peaks.
- Remove the melted chocolate from the heat and allow to cool for 5 minutes before stirring it into the cream mixture until fully combined.
- Once the cakes are cooled, place one cake on a serving plate and spread half of the frosting over the top of the cake.
- Place the second cake on top and spread the remaining frosting over the top and sides of the cake.
- Use a spatula to smooth the frosting and create a swirled pattern.
- Chill the cake in the fridge for 30 minutes to set the frosting before serving.
