Coffee cake with coffee buttercream



Coffee cake with coffee buttercream is a classic dessert that is enjoyed in many parts of the world, including England. This cake has a rich coffee flavor, which is complemented by a creamy coffee buttercream. It's the perfect dessert for coffee lovers!

To make a coffee cake with coffee buttercream, you will need the following ingredients:

For the cake:

  1. 200g self-raising flour
  2. 1 tsp baking powder
  3. 200g unsalted butter, softened
  4. 200g caster sugar
  5. 4 large eggs
  6. 2 tbsp instant coffee, dissolved in 1 tbsp boiling water
  7. 1 tbsp milk

For the coffee buttercream:

  1. 200g unsalted butter, softened
  2. 400g icing sugar
  3. 2 tbsp instant coffee, dissolved in 1 tbsp boiling water
  4. 1-2 tbsp milk

Instructions:

Preheat your oven to 180°C/160°C fan/gas mark 4. Grease and line a 20cm round cake tin with baking paper.


Sift together the flour and baking powder.


Cream together the butter and sugar until light and fluffy.


Beat in the eggs, one at a time, and then stir in the coffee mixture and milk.


Fold in the flour mixture until just combined.


Pour the batter into the prepared tin and smooth the top.


Bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.


Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.


To make the buttercream, beat the butter until light and fluffy.


Gradually sift in the icing sugar and beat until smooth.


Stir in the coffee mixture and enough milk to loosen the buttercream to a spreadable consistency.


Once the cake is completely cooled, spread the coffee buttercream over the top of the cake.


Decorate the cake with coffee beans or grated chocolate, if desired.
