Ho-tteok (호떡)




Ho-tteok (호떡) is a popular Korean street food that consists of a sweet pancake filled with a deliciously gooey and sweet filling. Here's a recipe for making ho-tteok at home:

Ingredients for the dough:

  1. 2 cups all-purpose flour
  2. 1 cup warm water
  3. 1 tablespoon vegetable oil
  4. 1 tablespoon sugar
  5. 1 teaspoon active dry yeast
  6. 1/2 teaspoon salt

Ingredients for the filling:

  1. 1/2 cup brown sugar
  2. 1/2 cup chopped nuts (such as walnuts, peanuts, or almonds)
  3. 1/2 teaspoon cinnamon
  4. Pinch of salt

Instructions:

  1. In a mixing bowl, whisk together the flour, warm water, vegetable oil, sugar, yeast, and salt until a smooth batter is formed. Cover the bowl with plastic wrap and let it rest for about 1 hour in a warm place, until the batter has doubled in size.
  2. Meanwhile, prepare the filling by mixing together the brown sugar, chopped nuts, cinnamon, and a pinch of salt in a small bowl.
  3. Once the batter has risen, give it a good stir to deflate it. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or cooking spray.
  4. Spoon about 2 tablespoons of the batter onto the skillet and spread it into a small round shape with the back of a spoon.
  5. Place a heaping teaspoon of the filling mixture in the center of the batter circle.
  6. Spoon another 1 tablespoon of batter on top to cover the filling, and use the back of the spoon to spread and flatten the batter into a pancake shape, sealing the edges to encase the filling.
  7. Cook the ho-tteok for about 2-3 minutes on each side, until they are golden brown and crispy.
  8. Remove the ho-tteok from the skillet and let them cool slightly before serving.
  9. Repeat the process with the remaining batter and filling.
  10. Serve the ho-tteok hot and enjoy the deliciously sweet and gooey filling inside the crispy pancake!

Note: Ho-tteok is best served fresh and hot. If you have any leftovers, you can reheat them in a toaster or pan to regain their crispy texture.
