Here's a simplified recipe for making Kasutera at home:

Ingredients:

  1. 4 large eggs
  2. 1/2 cup granulated sugar
  3. 1/2 cup all-purpose flour
  4. 2 tablespoons honey
  5. 1 tablespoon vegetable oil
  6. 1 tablespoon mirin (Japanese sweet rice wine)
  7. 1/2 teaspoon vanilla extract
  8. Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, beat the eggs and sugar together with an electric mixer on high speed for about 5-7 minutes, or until the mixture becomes pale and thick.
  3. Sift the flour into the egg mixture in three parts, gently folding it in with a spatula after each addition until just combined.
  4. In a small saucepan, heat the honey, vegetable oil, mirin, and vanilla extract over low heat until well combined and warm.
  5. Gradually add the warm honey mixture to the egg mixture, folding it in gently until well combined.
  6. Pour the batter into the prepared baking pan and tap the pan on the counter a few times to remove any air bubbles.
  7. Bake the Kasutera in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the Kasutera from the oven and let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  9. Once completely cooled, dust the top of the Kasutera with powdered sugar.
