Ingredients:

  1. 225g unsalted butter, softened
  2. 225g caster sugar
  3. 4 large eggs
  4. 225g self-raising flour, sifted

Instructions:

Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a 900g loaf tin with baking paper.


In a large mixing bowl, cream the butter and sugar together until pale and fluffy.


Add the eggs one at a time, beating well after each addition.


Fold in the sifted flour and lemon zest until the mixture is smooth and well combined.


Spoon the mixture into the prepared tin and smooth the top with a spatula.


Bake for 45-50 minutes, or until a skewer inserted into the centre of the cake comes out clean.


Leave the cake to cool in the tin for 5-10 minutes, then turn it out onto a wire rack to cool completely.
