Matcha Roll Cake is a beloved Japanese dessert that features a light and fluffy sponge cake filled with a sweet and creamy matcha green tea flavored filling. It's a delicate and elegant cake that's often enjoyed with tea or as a dessert for special occasions. Here's a basic recipe for making a Matcha Roll Cake:

Ingredients:

For the sponge cake:

  1. 4 large eggs, separated
  2. 1/2 cup granulated sugar
  3. 1/2 cup all-purpose flour
  4. 2 tablespoons matcha powder
  5. 1/4 teaspoon baking powder
  6. 1/4 teaspoon salt

For the matcha filling:

  1. 1 cup heavy cream
  2. 1/2 cup powdered sugar
  3. 2 tablespoons matcha powder

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 10x15 inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the egg yolks and 1/4 cup of sugar together until pale and thick. Add the flour, matcha powder, baking powder, and salt to the egg yolk mixture and mix until just combined.
  3. In a separate bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup of sugar and continue to beat until stiff peaks form.
  4. Gently fold the egg white mixture into the matcha batter until fully incorporated.
  5. Pour the batter into the prepared jelly roll pan and spread it out evenly with a spatula.
  6. Bake in the preheated oven for 12-15 minutes, or until the cake is lightly golden and springs back when lightly touched.
  7. While the cake is still warm, gently roll it up along with the parchment paper from one of the shorter ends. Let it cool completely in the rolled-up position.
  8. In the meantime, prepare the matcha filling by whisking together the heavy cream, powdered sugar, and matcha powder until thick and creamy.
  9. Once the cake has completely cooled, carefully unroll it and spread the matcha filling evenly over the cake.
  10. Gently roll the cake back up, this time without the parchment paper. Place the rolled cake seam-side down on a serving platter.
  11. Refrigerate the Matcha Roll Cake for at least 1 hour to allow it to set.
  12. Before serving, you can dust the top of the cake with additional matcha powder or powdered sugar for decoration, if desired.
  13. Slice the Matcha Roll Cake into slices and serve chilled. Enjoy the delicate flavors of matcha in this delightful Japanese cake!

Note: You can also customize the matcha roll cake by adding other fillings such as whipped cream, red bean paste, or fresh fruit for added flavor and variety.
