Sweet Potato Cake (고구마 케이크)

Ingredients:

  1. 2 huge yams (around 500g), stripped and diced.
  2. 1/2 cup unsalted butter, softened
  3. 1/2 cup granulated sugar
  4. 2 large eggs
  5. 1 teaspoon vanilla extract
  6. 1 cup all-purpose flour
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon baking soda
  9. 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a 9-inch round cake pan.
  2. Boil the diced sweet potatoes in a pot of water until they are soft and easily mashed with a fork. Drain the sweet potatoes and let them cool to room temperature.
