Ingredients You'll Need:

For the Cake:

2 large apples (e.g., Granny Smith or Bramley), peeled, cored, and thinly sliced

200g (7 oz) unsalted butter, softened

200g (7 oz) granulated sugar

4 large eggs

200g (7 oz) all-purpose flour

2 tsp baking powder

1/2 tsp ground cinnamon

A pinch of salt

For the Caramel Sauce:

200g (7 oz) granulated sugar

100g (3.5 oz) unsalted butter

120ml (1/2 cup) heavy cream

1/2 tsp vanilla extract

Instructions:

Making the Caramel Sauce:

In a heavy-bottomed saucepan, melt the granulated sugar over medium heat, stirring constantly with a wooden spoon. Be careful not to let it burn.

Once the sugar has completely melted and turned a rich amber color, add the butter and stir until it's fully incorporated. Be cautious, as the mixture will bubble vigorously.

Slowly pour in the heavy cream while stirring continuously. The mixture will bubble again but will eventually come together into a smooth caramel sauce.

Remove the caramel sauce from heat, stir in the vanilla extract, and set it aside to cool.

For the Cake:

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake tin with parchment paper.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

Sift the flour, baking powder, ground cinnamon, and a pinch of salt into the wet mixture. Gently fold the dry ingredients into the wet until you have a smooth batter.

Pour half of the batter into the prepared cake tin and spread it evenly.

Arrange the thinly sliced apple pieces over the batter in the cake tin.

Pour the remaining batter over the apples and smooth the top.

Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the tin for about 10 minutes before transferring it to a wire rack.

Assembly:

Once the cake has cooled slightly, poke several holes in the top using a skewer.

Pour a generous amount of the caramel sauce over the warm cake, allowing it to seep into the holes and drizzle down the sides.

Reserve some caramel sauce for serving.

Slice and serve your English Caramel Apple Cake with a drizzle of additional caramel sauce and a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.

Enjoy your slice of this delightful English Caramel Apple Cake, a perfect balance of sweetness and the comforting flavors of autumn. It's a delightful dessert to savor with friends and family.
