Ingredients:

For the Puff Pastry:

1 sheet of store-bought puff pastry, thawed according to package instructions

For the Pastry Cream:

2 cups (480ml) whole milk
1 vanilla bean or 1 teaspoon vanilla extract
6 large egg yolks
½ cup (100g) granulated sugar
¼ cup (30g) cornstarch
Pinch of salt
2 tablespoons (28g) unsalted butter

For the Glaze:

1 cup (120g) powdered sugar
2 tablespoons (30ml) milk or water
½ teaspoon vanilla extract

Instructions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll out the thawed puff pastry on a lightly floured surface into a rectangle about ¼-inch thick. Trim the edges to create straight edges, then transfer the pastry to the prepared baking sheet.

Prick the surface of the pastry all over with a fork to prevent it from puffing up too much during baking. Place another sheet of parchment paper over the pastry and weigh it down with another baking sheet or oven-safe dish to keep it flat.

Bake the pastry in the preheated oven for 15-20 minutes, or until it is golden brown and crisp. Remove from the oven and let it cool completely on a wire rack.

To make the pastry cream, split the vanilla bean lengthwise and scrape out the seeds. In a saucepan, heat the milk and vanilla bean (seeds and pod) over medium heat until it just begins to simmer. Remove from heat and let it steep for 10-15 minutes to infuse the flavor.

In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, and a pinch of salt until smooth and pale.

Gradually pour the warm milk into the egg yolk mixture, whisking constantly to prevent curdling.

Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon, until it thickens and comes to a boil. This should take about 5-7 minutes.

Once thickened, remove the pastry cream from the heat and discard the vanilla bean pod. Stir in the butter until melted and fully incorporated.

Transfer the pastry cream to a bowl and cover the surface with plastic wrap, pressing it directly onto the cream to prevent a skin from forming. Refrigerate until chilled and set, about 2 hours.

Once the puff pastry and pastry cream are cooled, assemble the Mille-Feuille. Cut the puff pastry into three equal rectangles.

Place one rectangle of puff pastry on a serving platter and spread a generous layer of pastry cream over the top. Repeat with another layer of pastry and cream, then top with the final layer of pastry.

To make the glaze, whisk together the powdered sugar, milk or water, and vanilla extract until smooth. Adjust the consistency as needed by adding more powdered sugar or liquid.

Pour the glaze over the top layer of puff pastry, allowing it to drip down the sides.

Chill the assembled Mille-Feuille in the refrigerator for at least 30 minutes to allow the layers to set.

Once chilled, use a sharp knife to slice the Mille-Feuille into individual portions.

Serve the Mille-Feuille immediately, garnished with fresh berries or a sprinkle of powdered sugar, if desired.
