1 cup heavy cream
1 cup semi-sweet chocolate chips
1 tablespoon butter
1/2 teaspoon vanilla extract
For Garnish (optional):
Crushed chocolate cookies or chocolate chips
Whipped cream
Instructions
Prepare the Cake: Preheat oven to the temperature on the cake mix box or your recipe. Grease and flour a 9-inch round cake pan. Bake as instructed and cool completely. Slice the cake into two layers if using one pan.
Prepare the Ice Cream Layer: Allow the ice cream to soften for 10-15 minutes. Spread a thick layer of ice cream over one cake layer, smoothing it evenly.
Assemble the Cake: Place the second cake layer on top of the ice cream layer, pressing gently. Freeze the cake for 1-2 hours until the ice cream firms up.
Make the Fudge Topping: In a saucepan, heat heavy cream until it simmers. Remove from heat and stir in chocolate chips, butter, and vanilla extract until smooth. Let cool slightly.
Finish the Cake: Pour the cooled fudge over the chilled cake, spreading evenly. Garnish with crushed cookies or chocolate chips if desired.
Serve: Freeze for an additional 30 minutes to set the fudge. Slice and serve with whipped cream or extra mint chocolate chips.
