Ingredients:

For the Cake:

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mango puree (from about 2 ripe mangoes)
1/2 cup Greek yogurt or sour cream

For the Raspberry Swirl:

1 cup fresh raspberries
2 tablespoons granulated sugar

For the Glaze (Optional):

1 cup powdered sugar
2-3 tablespoons mango puree
1 tablespoon fresh lime juice

Instructions:

Preheat the Oven and Prepare the Pan:

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Make the Cake Batter:

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the mango puree and Greek yogurt, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Prepare the Raspberry Swirl:

In a small bowl, mash the fresh raspberries with a fork until smooth.

Stir in the granulated sugar until well combined.

Assemble the Cake:

Pour half of the cake batter into the prepared pan and spread it out evenly.

Spoon dollops of the raspberry mixture over the batter. Use a knife or toothpick to swirl the raspberry mixture into the batter.

Pour the remaining cake batter over the raspberry swirl layer and spread it out evenly.

Repeat the dolloping and swirling process with the remaining raspberry mixture on top of the second layer of batter.

Bake the Cake:

Place the cake pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Optional Glaze:

In a small bowl, whisk together the powdered sugar, mango puree, and fresh lime juice until smooth. Add more mango puree or powdered sugar as needed to reach your desired consistency.

Drizzle the glaze over the cooled cake before serving, if desired.

Serve and Enjoy:

Slice the Mango Raspberry Swirl Cake and serve each piece with a sprinkle of powdered sugar or a dollop of whipped cream, if desired.

Enjoy the tropical flavors and beautiful swirls of raspberry in this exquisite cake with friends and family.
