Choco Pie (초코파이) is a popular snack that originated in South Korea. It is a marshmallow-filled cookie or cake that is covered with chocolate, and it has become a beloved treat enjoyed by people of all ages in many countries around the world.
Here's a simple recipe for making Choco Pie at home:
Ingredients:
For the Cake/Cookie:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
For the Marshmallow Filling:1 cup marshmallow fluff or marshmallow creme
For the Chocolate Coating:
1 cup chocolate chips (milk or dark, depending on preference)
2 tablespoons vegetable oil
Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
Add the vegetable oil, milk, and vanilla extract to the dry ingredients and mix until a smooth batter is formed.
Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Bake the cake/cookie layer in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake/cookie layer from the oven and let it cool completely in the pan.
Once the cake/cookie layer is cooled, carefully lift it out of the pan using the parchment paper and place it on a cutting board.
Using a round cookie cutter or a glass, cut out circles from the cake/cookie layer to create the top and bottom layers of the Choco Pies.
Place a dollop of marshmallow fluff or marshmallow creme on top of one cake/cookie circle, then place another cake/cookie circle on top to create a sandwich.
Repeat with the remaining cake/cookie circles and marshmallow filling to make all the Choco Pies.
In a microwave-safe bowl, melt the chocolate chips and vegetable oil in short bursts in the microwave, stirring in between, until smooth and melted.
Dip each Choco Pie sandwich into the melted chocolate, coating it evenly on all sides.
Place the coated Choco Pies on a parchment-lined tray or plate and refrigerate for about 30 minutes, or until the chocolate coating is set.
Once the chocolate coating is set, your homemade Choco Pies are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator.
