1 cup coconut milk
3/4 cup sugar
1/2 cup pandan juice (blend 6 pandan leaves with 1/2 cup water, then strain)
1/2 cup all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon salt
Instructions
Step 1: Preparing the Glutinous Rice Layer
Drain the soaked glutinous rice and place it in a heatproof pan.
Add coconut milk, salt, and the knotted pandan leaf.
Steam over medium heat for about 25–30 minutes or until fully cooked.
Remove the pandan leaf and fluff the rice with a fork.
Transfer the cooked rice into a greased 8-inch square pan, pressing it down firmly with a spatula to form an even layer.
Step 2: Making the Pandan Custard Layer
In a mixing bowl, whisk eggs and sugar until well combined.
Add coconut milk, pandan juice, flour, cornstarch, and salt. Mix until smooth.
Strain the mixture to remove any lumps.
Pour the custard mixture over the prepared glutinous rice layer.
Steam over low heat for about 30–35 minutes or until the custard is set. Cover the lid with a cloth to prevent water from dripping onto the custard.
Step 3: Cooling and Serving
Allow the kueh to cool completely before slicing.
Use a greased knife to cut into small squares or diamond shapes.
Serve at room temperature and enjoy!
