Kueh Dadar (Pandan Coconut Roll) Recipe

Ingredients

80g gula melaka (palm sugar), finely chopped


1 pandan leaf, knotted

Instructions

Step 1: Prepare the Coconut Filling

In a small saucepan, add the finely chopped gula melaka, pandan leaf, water, and salt.


Heat the mixture over low heat until the sugar melts, stirring occasionally.


Add the grated coconut and mix well, allowing it to absorb the caramelized sugar.


Cook for another 3-5 minutes until the mixture thickens, then remove the pandan leaf and set the filling aside to cool.


Step 2: Make the Crepe Batter

In a mixing bowl, combine the all-purpose flour and salt.


In a separate bowl, whisk the egg and mix it with coconut milk, pandan extract, and vegetable oil.


Gradually pour the wet ingredients into the dry ingredients, stirring continuously until you get a smooth, lump-free batter.


Let the batter rest for 10-15 minutes.


Step 3: Cook the Crepes

Heat a non-stick pan over medium heat and lightly grease it with oil.
