Ingredients:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup brewed coffee, cooled
- 1 cup semi-sweet chocolate chips, melted
- 1/2 cup caramel sauce
- 1/4 cup caramel sauce, for drizzling
- 1/2 cup whipped cream (store-bought or homemade)

1. Preheat the oven to 325°F (160°C). In a bowl, combine chocolate cookie crumbs, 1/4 cup sugar, and melted butter. Press this mixture into a 9-inch springform pan. Bake for 10 minutes and let it cool.
2. Beat the cream cheese until it's smooth, then gradually mix in 1 cup sugar. Add eggs one at a time, mixing gently after each addition. Stir in the brewed coffee and melted chocolate, and fold in the caramel sauce.
