Ingredients:
For the Cake:
2 1/2 cups (300g) all-purpose flour
1 1/2 cups (300g) granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups (360ml) vegetable oil
1 cup (240ml) buttermilk, at room temperature
2 large eggs, at room temperature
1 tablespoon green food coloring
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
16 oz. cream cheese, softened
1/2 cup (115g) unsalted butter, softened
4 cups (480g) powdered sugar
2 teaspoons vanilla extract
Instructions:
Preheat the oven to 350°F (175°C).
Grease and flour three 9-inch round cake pans.
In a mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
In a separate bowl, mix together the vegetable oil, buttermilk, eggs, green food coloring, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
Divide the batter evenly among the prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Prepare the Frosting:
In a mixing bowl, beat the cream cheese and butter until smooth.
Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.
Assemble the Cake:
Place one cake layer on a serving plate and spread a layer of frosting on top.
Repeat with the remaining layers, frosting the sides and top of the cake.
Decorate with whipped cream and chocolate shavings if desired.
