First recipe of the year!
Let's celebrate with a delightful Champagne Cake that’s perfect for any occasion!

Ingredients:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 cup unsalted butter (room temperature)
- 2 cups granulated sugar
- 4 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 cup champagne (room temperature)
- 1/2 cup whole milk (room temperature)
- 2 cups heavy cream (chilled)
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, beat the butter and sugar together until fluffy, about 3-5 minutes.
4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
5. Gradually mix in dry ingredients, alternating with champagne and milk, starting and ending with dry. Don't overmix!
6. Divide batter into pans and bake for 25-30 minutes until a toothpick comes out clean.
7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
8. For the frosting, whip heavy cream until it thickens. Add powdered sugar and vanilla, whipping until stiff peaks form.
9. Layer one cake on a plate, spread whipped cream, and top with the second layer. Frost the top and sides.
10. Garnish with berries, edible flowers, or a sprinkle of edible glitter!
