1/2 teaspoon salt
1/2 cup unsalted butter, softened
3 large eggs
1 cup crushed pineapple, drained
1/4 cup dark rum
1 teaspoon vanilla extract
For the Glaze:
1/4 cup unsalted butter
1/2 cup granulated sugar
1/4 cup dark rum
1/4 cup pineapple juice
Optional: Pineapple slices and maraschino cherries for garnish
Instructions:
Preheat the Oven and Prepare the Pan:
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
Make the Cake:
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a large mixing bowl, cream together the softened butter and eggs until light and fluffy.
Stir in the crushed pineapple, dark rum, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake the Cake:
Place the baking pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool slightly while you prepare the glaze.
Make the Glaze:
In a small saucepan, melt the butter over medium heat.
Stir in the sugar, dark rum, and pineapple juice.
Bring the mixture to a simmer, stirring constantly, and cook for 2-3 minutes until the sugar has dissolved and the glaze has thickened slightly.
Glaze the Cake:
While the cake is still warm, poke holes all over the top with a skewer or fork.
Pour the warm glaze evenly over the top of the cake, allowing it to soak in.
Garnish and Serve:
If desired, decorate the top of the cake with pineapple slices and maraschino cherries for a festive touch.
Allow the cake to cool completely before slicing and serving.
Serve slices of this Pineapple Rum Cake on their own or with a scoop of vanilla ice cream for a truly indulgent treat.
