Ingredients:
- 4 large eggs

- 1 cup all-purpose flour

- 1/2 cup sugar

- 1/4 cup vegetable oil

- 1/2 cup buttermilk

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- Purple food coloring (as desired)

- 1 cup cream cheese, softened

- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract (for filling)

- 1 cup heavy whipping cream (optional for topping) 

Instructions:
1. Preheat your oven to 350°F (175°C) and line a 15x10-inch jelly roll pan with parchment paper.
2. In a large bowl, beat the eggs and sugar until light and frothy. Mix in vegetable oil, buttermilk, and vanilla extract.
3. In another bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
4. Add purple food coloring until you achieve your desired hue. Pour into the pan and smooth it out evenly.
5. Bake for 12-15 minutes until the cake springs back when pressed.
6. While the cake bakes, prepare the filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
7. Once baked, carefully turn the cake onto a powdered sugar-dusted kitchen towel and peel off the parchment.
8. Spread the cream cheese filling over the cake, roll it up from one end with the towel, and let it cool completely.
9. When cool, unroll the cake, remove the towel, and re-roll it without the towel, seam side down.
10. Optionally, whip the heavy cream and spread it on top for an extra treat!
