Welsh cakes, also known as griddle cakes or bakestones, are a traditional cake from Wales, which is a country in the United Kingdom, not England. Welsh cakes are a type of small, round cake that is cooked on a griddle or bakestone, rather than in an oven. They are made with flour, butter, sugar, and dried fruit, and are usually served warm, dusted with sugar.
Welsh cakes are similar to a scone or a pancake, but with a denser texture and a sweeter flavor. They are a popular snack or breakfast food in Wales and can be found in many cafes and bakeries throughout the country.
Here's a recipe for Welsh cakes:
Ingredients:
- 225g self-raising flour
- 85g caster sugar
- 1/2 tsp mixed spice
- 1/2 tsp baking powder
- 115g unsalted butter, cubed
- 1 large egg, beaten
- 50g dried currants
- A pinch of salt
- Milk, as needed
- Extra caster sugar, for dusting
Instructions:
- In a large mixing bowl, sift together the flour, caster sugar, mixed spice, and baking powder. Add a pinch of salt and mix well.
- Rub in the cubed butter until the mixture resembles fine breadcrumbs.
- Stir in the currants and beaten egg until a dough forms. If the mixture seems too dry, add a little milk to bring it together.
- On a lightly floured surface, roll out the dough to a thickness of about 5mm.
- Using a 7-8cm cutter, cut out rounds of dough.
- Heat a griddle or heavy-based frying pan over medium heat. Grease with a little butter.
- Cook the Welsh cakes for about 2-3 minutes on each side, or until golden brown and cooked through.
- Remove the Welsh cakes from the griddle or pan and place on a wire rack to cool slightly.
- Sprinkle with a little caster sugar before serving warm.
Enjoy your delicious Welsh cakes!
