Dorayaki is a popular Japanese dessert that consists of two fluffy pancakes filled with a sweet red bean paste called "anko" in between. It's a beloved treat in Japan and often enjoyed as a snack or dessert. Here's a recipe for making Dorayaki at home:

Ingredients for Pancakes:

  1. 1 cup all-purpose flour
  2. 1/4 cup granulated sugar
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon baking soda
  5. 1/2 cup milk
  6. 2 large eggs
  7. 1 teaspoon vanilla extract

Ingredients for Red Bean Paste Filling:

  1. 1 cup sweetened red bean paste (anko)
  2. Optional: additional fillings such as whipped cream, Nutella, or fruit preserves

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and baking soda.
  2. In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, and whisk until well combined and no lumps remain.
  4. Let the pancake batter rest for about 10 minutes.
  5. Heat a non-stick pan or griddle over medium heat and lightly grease it with cooking spray or butter.
  6. Pour about 1/4 cup of the pancake batter onto the hot pan and spread it into a circle with the back of a spoon to form a small pancake.
  7. Cook the pancake for about 2-3 minutes, or until bubbles form on the surface.
  8. Flip the pancake and cook for another 1-2 minutes, or until lightly golden brown.
  9. Transfer the cooked pancake to a plate and repeat the process with the remaining batter, greasing the pan as needed.
  10. Once all the pancakes are cooked, let them cool completely.
  11. Once the pancakes are fully cooled, spread about 1 tablespoon of sweetened red bean paste (anko) onto the center of one pancake.
  12. Place another pancake on top of the red bean paste to form a sandwich.
  13. Press down gently to adhere the pancakes together.
  14. Repeat the process with the remaining pancakes and red bean paste.
  15. Optionally, you can also fill the pancakes with other desired fillings such as whipped cream, Nutella, or fruit preserves.
  16. Serve the Dorayaki immediately and enjoy!
