Ingredients:

- 4 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry pie filling or fresh pitted cherries
- 2 tbsp cherry liqueur (optional)
- 1/2 cup chocolate shavings or curls
- Fresh cherries


Directions:

1. Let’s kick things off by making the Chocolate Sponge Cake! Preheat your oven to 350°F (175°C).

Grab a 10x15-inch jelly roll pan and line it with parchment paper.

In a mixing bowl, beat those eggs and sugar together using an electric mixer on high speed for about 5 minutes, or until it’s thick and pale.

Now, gently fold in the vanilla extract and sifted cocoa powder, being super careful not to deflate our lovely batter.

Spread the mixture evenly in your prepared pan and pop it into the oven for about 10–12 minutes, until it springs back when you lightly touch it.

2. Time to roll! While the cake is still warm, turn it onto a clean kitchen towel that’s dusted with powdered sugar.

Remove that parchment paper and gently roll the cake up with the towel.

Let it cool completely in this rolled-up shape—it’ll help it keep that gorgeous form!

3. Now, let’s whip up that heavenly Whipped Cream Filling.

In a chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip it all up until stiff peaks form—this is where the magic happens!

4. It’s assembly time! Carefully unroll your cooled cake.

Spread a generous layer of whipped cream evenly over the cake, leaving about a 1/2-inch border around the edges.

Scatter your cherry pie filling or fresh pitted cherries on top of the cream.

If you’re feeling fancy, drizzle some cherry liqueur over it. Now, gently roll the cake back up, seam-side down.

5. Get your decorating skills ready! Spread any remaining whipped cream over the outside of the roll.

To achieve that classic Black Forest look, decorate with chocolate shavings and fresh cherries.

6. Last but not least, chill and serve! Pop the roll into the refrigerator for at least 1 hour to set.
