Kueh Kochi (Sticky Rice Dumpling) Recipe



Kueh Kochi, also known as Kuih Kochi, is a traditional Southeast Asian delicacy made of glutinous rice flour filled with sweet coconut filling and wrapped in banana leaves. This sticky rice dumpling is popular in Malaysia, Indonesia, and Singapore, often enjoyed as a tea-time snack or festive treat.

Ingredients

For the Dough:

  • 250g glutinous rice flour

  • 200ml coconut milk

  • 1 tablespoon sugar

  • 1/4 teaspoon salt

  • A few drops of pandan extract (optional)

  • 2 tablespoons vegetable oil

For the Filling:

  • 100g grated coconut (fresh or desiccated)

  • 80g palm sugar (Gula Melaka), finely chopped

  • 2 tablespoons water

  • 1/4 teaspoon salt

  • 1 pandan leaf, knotted

For Wrapping:

  • Banana leaves, cut into 15x15 cm squares

  • Cooking oil for greasing


Instructions

Step 1: Prepare the Filling

  1. In a pan, combine the grated coconut, palm sugar, water, salt, and pandan leaf.

  2. Cook over low heat, stirring constantly until the sugar melts and the mixture thickens.

  3. Remove the pandan leaf and allow the filling to cool completely.

Step 2: Prepare the Dough

  1. In a mixing bowl, combine glutinous rice flour, sugar, and salt.

  2. Gradually add coconut milk while kneading until a smooth dough forms.

  3. Add a few drops of pandan extract for a fragrant green hue (optional).

  4. Divide the dough into equal portions (about the size of a small lime).

Step 3: Assemble the Dumplings

  1. Take a portion of dough and flatten it in your palm.

  2. Place a small spoonful of the coconut filling in the center and seal the edges, shaping it into a ball or oval.

  3. Lightly grease the banana leaves and wrap each dumpling, folding the ends securely.

Step 4: Steam the Dumplings

  1. Arrange the wrapped dumplings in a steamer, ensuring they are not touching each other.

  2. Steam over medium heat for about 15–20 minutes until the dumplings turn translucent.

Step 5: Serve

  • Let the Kueh Kochi cool slightly before serving.

  • Enjoy with a cup of tea or coffee!


Tips for Best Results

  • If banana leaves are not available, parchment paper can be used as an alternative.

  • Ensure the dough is not too sticky; adjust with extra flour if necessary.

  • Store leftovers in an airtight container and reheat by steaming before serving.
