Coconut and lime cake is a tropical-flavored dessert that is popular in England. It's a light and moist cake with a hint of tangy lime and sweet coconut. This cake is perfect for summer parties or as a refreshing treat after a meal.
To make a coconut and lime cake, you will need the following ingredients:
- 200g self-raising flour
- 1 tsp baking powder
- 200g unsalted butter, softened
- 200g caster sugar
- 4 large eggs
- 50g desiccated coconut
- Zest of 2 limes
- Juice of 1 lime
- 2-3 tbsp coconut milk
Instructions:
Preheat your broiler to 180°C/160°C fan/gas mark 4. Oil and line a 20cm round cake tin with baking paper.
Filter together the flour and baking powder.
Cream together the margarine and sugar until light and cushy.
Beat in the eggs, each in turn, and afterward mix in the parched coconut, lime zing, and lime juice.
Overlap in the flour combination until recently joined.
Mix in the coconut milk to slacken the player.
Empty the player into the pre-arranged tin and smooth the top.
Heat for 35-40 minutes, or until a stick embedded into the middle confesses all.
Permit the cake to cool in the tin for 10 minutes prior to moving it to a wire rack to totally cool.
Serve the cake with a tidying of icing sugar, additional lime zing, and whipped cream or coconut cream, whenever wanted.
