Tiramisu cake is a popular dessert in England that is based on the classic Italian dessert of the same name. It features layers of sponge cake or ladyfingers soaked in coffee and liqueur, and a creamy filling made from mascarpone cheese, whipped cream, and sugar.

Ingredients:
For the Sponge Cake:
4 eggs
1 cup (200g) granulated sugar
1 cup (125g) all-purpose flour
1/2 cup (60g) cornstarch
1 tsp baking powder
1/4 tsp salt
For the Filling:
2 cups (480ml) heavy cream
8 oz (225g) mascarpone cheese
1/2 cup (100g) granulated sugar
1 tsp vanilla extract
1/4 cup (60ml) coffee, cooled
2 tbsp (30ml) coffee liqueur
Cocoa powder, for dusting
Instructions:
Preheat the oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans and line them with parchment paper.
In an enormous bowl, beat the eggs and sugar together until pale and soft. Sift in the flour, cornstarch, baking powder, and salt, and fold them in gently until well combined.
Divide the batter evenly between the prepared cake pans and bake for 20-25 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool completely.
In a medium bowl, whisk together the heavy cream, mascarpone cheese, sugar, and vanilla extract until thick and creamy.
In a little bowl, join the espresso and espresso alcohol.
To assemble the cake, place one of the sponge cake layers on a serving plate. Brush the top with half of the espresso combination. Spread half of the mascarpone cream filling over the soaked cake layer. Repeat with the remaining sponge cake layer, coffee mixture, and mascarpone cream filling.
Chill the Tiramisu cake in the refrigerator for at least 2 hours or until firm. Dust the top with cocoa powder prior to serving.
